Jakot Fornazarič Wine
Origin: Slovenia
GRAPE VARIETY: Sauvignonasse - Sauvignon Vert
Characteristics: Jakot is a varietal white wine, better known in the past as Friulian Tokaj. The must begins to ferment and remains in contact with the berry skin (maceration) for 5 days. After fermentation is complete, the wine remains on its own fine lees for a whole year and is transferred to a stainless steel tank before the next harvest. It matures and clarifies in the tank for another two years and is then bottled without filtration. It is yellow in color with green hues. Intense bouquet, we can smell herbs and acacia. It is full-flavored with a solid aftertaste, medium-bodied.
WINEMAKER'S DESCRIPTION: The Fornazarič estate from the Vipava Valley has a very long history. The hilly slopes have always been planted with fruit trees and vines. The farm expanded over the years, changing the scope of individual activities and abandoning some. They managed to survive over time and preserve some of the original methods of production in harmony with nature. The favorable location, climate and production method enabled the development and expansion of viticulture on all nearby slopes and thus also the production of quality wine.
