Brut Nature ŽČ. Velvet black is known for being the oldest vine in the world to bear fruit. It can be found in Maribor, where it was planted 400 years ago. As far as wine production is concerned, velvet black has not achieved such recognition in the world as in Slovenia. It is an endemic Slovenian variety, found mainly in the Dolenjska region and elsewhere in the east of the country. Slapšak's French winemaker discovered exceptional potential for sparkling wine production in it and realized it in Brut Nature ŽČ sparkling wine. In doing so, he opted for a strict selection of grapes from our best locations, a precise selection of the best juices, i.e. "Heartbeat". Vinification takes place only in steel barrels, with at least five years of aging on the lees in the bottle. Brut Nature ŽČ sparkling wines are not dosed after disgorging to ensure a full and unadulterated experience of our most gastronomic cuvée. Nose and mouth: Brut Nature ŽČ is straw golden in color with amber reflections characteristic of this “blanc de noirs” sparkling wine. In the nose we first feel the gentle sour aromas with a pleasant hint of citrus; the main perceptible notes are mandarin, pomelo and quince jam. The taste is winey, very direct; almost mineral. The finish is very long and harmonious, with the characteristic freshness of our terroir. How to drink: The sharpness of this cuvée goes well with iodine in seafood, such as sea urchins and oysters, where this sparkling wine acts as a spice. It is strong enough that it can also be served with sushi or sashimi, and it can even be served with goat cheese.
